Facing Up to Supply Chain Fragility

Interview with Propel & Azzurri Group
Facing Up to Supply Chain Fragility
Interview with Propel & Azzurri Group

We’ve partnered with Propel, the leading hospitality trade publication, to host a new webinar series where Propel Group Editor, Mark Wingett, talks to leading supply chain experts about the current challenges facing the sector, and how they are navigating them.

In the first video in the series, Mark is joined by Stefan Porter, Purchasing and Supply Chain Director at The Azzurri Group – the operator behind ASK, Zizzi and Coco Di Mama. They talk about how the business is dealing with a supply chain under pressure, adapting the business’ approach to the erosion of margin, the challenges and opportunities created by operating across several brands, and the role of menu engineering.

Key Takeaways

 • Stefan alludes to the fact that there were “some things we took for granted” from the days prior to the pandemic and the formalization of Brexit. These include consistency of supply and being able to get your hands on what you need, when you need it.
 • He also divulges how the landscape has shifted, detailing how the business has been forced to rebuild entire supply chains, leading to much longer lead times.
 • When asked whether it’s all about cutting costs, Stefan believes it’s actually the opposite. The business needs to “understand and innovate, and make sure it’s providing the right value for the consumer”, and that includes “buying the right products, finding the right teams and having great food on the menu”.
 • The business has invested heavily in technology in recent years, relying on it to support customers around allergens and build consumer confidence, to changing the way people pay, to helping back-of-house staff prioritise and understand requirements across delivery and restaurant services.
