The State of Restaurant Operations 2026 survey of 112 restaurant leaders provides the first industry-wide answer. Operational maturity, measured across forecasting, people, execution, and profitability, maps directly to financial outcomes.

What We’ve Already Learned in 2026

  • The industry average maturity score is 63 out of 100. Forecasting and people management score in the 70s. Execution consistency and profitability sit in the 50s. The drop-off between planning and execution is where margin leaks.
  • Execution Consistency (56%) and Efficiency & Profitability (54%) score lowest. Forecasting is the industry’s strongest pillar at 74%, but the gains don’t carry through to consistent execution or financial outcomes at most brands.
  • 44% of operators report 6 or more hours per week of unplanned admin. That’s time spent responding to call-outs, fixing payroll errors, and adjusting schedules at the last minute.
  • Operators with tight forecasting (<5% variance) are 3.3x more likely to report low unplanned admin hours. Forecasting accuracy and operational stability are directly connected in the data. Tighter forecasts mean fewer downstream disruptions.

  • 75% of Leaders report profit margins above 9%, versus 30% of Starters. What separates them operationally: 68% of Leaders hold sales forecast variance under 5% (vs. 7% of Starters), and 89% keep unplanned admin under 5 hours per week (vs. 26%).
  • Zero Leaders report high or very high GM/AGM turnover. Among Starters, 30% do. Leadership stability and operational maturity track together in the data.
  • The top driver of inventory variance is waste and spoilage (54%), followed by receiving/counting errors (37%) and recipe non-compliance (29%). These are execution problems that compound across locations.

The Maturity Multiplier

The data shows that these areas reinforce each other. Tighter forecasts reduce unplanned admin. Lower admin burden reduces manager turnover. Stable leadership drives more consistent tool usage. And consistent tool usage feeds back into better forecasting. Managing them in isolation limits the return.
